10. Adequate handwashing sinks properly supplied and accessible
- comments: observed the dish area hand washing sink blocked with garbage and cans inside of the sink basin and on top of the hot and cold water handles during the inspection. Instructed to always have hand washing sinks accessible at all times to allow for proper hand washing. Priority foundation 7-38-030(c). Citation issued.
36. Thermometers provided & accurate
- comments: observed no ambient air thermometer inside the 1-door pizza cooler in the front prep/cashier area. Instructed to provide conspicuous and easily readable thermometers inside all refrigerator units to properly monitor the ambient air temperature of equipment.
38. Insects, rodents, & animals not present
- comments: observed approximately 15 live fruit flies on the aluminum cans, cardboard, and other items inside the three compartment sink and the handwashing sink in the rear dish area. Also observed 6 rat droppings on the floor next to the wall on the right side of the soda machine boxes in the rear dish area. Management instructed to clean and remove all rodent droppings from affected areas and to contact pest control to eliminate all pest activity from the premises. Priority foundation 7-38-020(a). Citation issued.
49. Non-food/food contact surfaces clean
- comments: found heavy ice and dirt build up inside the dippin dots chest freezer. Also noted an accumulation of food debris on the counters underneath cooking equipment in the front prep area. Instructed to clean and maintain.
55. Physical facilities installed, maintained & clean
- comments: observed clutter and unnecessary items in the rear food storage area. Instructed to remove clutter and unnecesary items to prevent rodent harborage, and to reorganize remaining items, storing off the floor to allow for adequate floor cleaning.
60. Previous core violation corrected
- comments: previous core violations from 8/25/2021 report #2528545 not corrected: violation #55 (6-501. 12) observed excess food debris on floor and floor drains behind all refrigeration units, coffee station area, inside walk-in cooler and floor throughout rear storage area. Instructed to detail clean floor throughout premises. Must maintain floor dry at all times to prevent pest breeding. Violation #56 (6-501. 14) observed dust build up on ventilation vents throughout premises. Must clean and maintain. Must correct previous core violations. Priority foundation 7-42-090. Citation issued.
