- comments: 3-501. 14 observed facility using large pots to cool cooked beans in the walk in cooler. The cooked beans were at 70f during the inspection. Instructed to discard and always properly cool all tcs foods, from 135f to 70f within 2 hours and from 70f-40f within 4 hours. Priority violation. Citation issued 7-38-005.

Observed about 20 live small flies located on the walls of the dish washing area and about 30 small flies and two large flies located on the drain pipes in the basement food prep area. Instructed to eliminate live flies activity and recommended contacting pest control for a service. Priority foundation. Citation issued 7-38-020(a).
