Observed approximately 1 rodent droppings on the floor of kitchen walkway. Observed approximately 12 rodent droppings on the floor of the bar. Operator cleaned and sanitized the area. Operator showed that they have had recent work done by EcoPest. **Warning**
- High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed on the cook line: Ricotta cheese (45F - Cold Holding). Operator stated it had been out for approximately 2hrs. Operator placed food in a walk in cooler. **Corrective Action Taken** **Warning**
- High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined.
