Pesto Food Poisoning

Pesto, like other jarred foods, could be the source of food poisoning. In 2013, more than 50 individuals in Italy fell ill after consuming pesto that had been contaminated with Clostridium botulinum. Symptoms associated with a Clostridium botulinum infection include diarrhea, blurred vision, and difficulty swallowing.

Water temperature was at 81. 5f. Instructed to repair and maintain water temperature at least 100f for proper hand washing. Facility has nother hand sink for hand washing. Priority violation. Citation issued 7-38-030(c) a 2-day notice was given to come into compliance.

- comments: observed improper cold holding temperatures of (tcs foods) inside 2-door front pizza prep area. Observed raw hamburgers at 48. 7f, pesto sauce at 54. 4f and ham at 53. 4. Manager immediately and voluntarily discarded approximately 7lbs of food value of $56. Priority violation 7-38-005.

- comments: observed no consumer advisory disclosure and reminder statement on the menu for raw or undercook foods. Management instructed to disclose and describe which food can be order raw or undercooked and link those items to reminder statement. Priority foundation violation 7-38-005 citation issued.

33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed 2-door front pizza cooler with air temperature of 57. 1f inside the unit. Cooler was used to stored tcs foods. Instructed to repair cooler that maintains temperature of 41. 0f or below. Priority violation 7-38-005. Citation issued. Unit tagged held for inspection.

41. Wiping cloths: properly used & stored
- comments: observed wiping cloths stored on top of prep tables and dish washing machine. Must properly stored wiping cloths in a sanitizing solution when not in use.

- comments: observed dirt and debris on floor and walls in rear dishwashing area and rear prep area. Must clean and maintain. Observed excessive dirt and food debris on basement underneath storage shelving, behind unused equimpent. Must detail clean floor and maintain.

- comments: observed no inspection summary report posted in plain view of establishment customers. Managment was given a copy of todays inspection summary report and was instructed to posted. Priority foundation violation 7-42-010(b). Citation isued.
