Have some idea what might be the true cause. Gluten-free pizza crust and bread type products almost always contain xanthan gum which causes some people severe stomach distress and diarrhea. Also some gluten-free stuff has inulin which is another ingredient that causes the same issue. It's possible the vegan cheese might use these ingredients too. Some people are sensitive to it. I had to give up all gluten-free products myself and go back to regular wheat.

Myself and two friends noticed this several years ago that Cheerios now causes stomach pain and diarrhea. We tried it again with another box months later and again the same. Several other oat cereals cause it. Kinda suspect it's Roundup being sprayed on oats in the field that is causing it.
