38. Insects, rodents, & animals not present
- comments: continued non-compliance with health codes; we continued to observe rodent activity (mice droppings) in various areas of the premises. Approximately 20 mice droppings under and around the copier stored on shelf behind front counter area and approximately 5 mice droppings underneath the mop sink area and approximately 10 mice droppings on floor around the hand sink and behind the toilet in wash room and approximately 5 mice droppings in basement under and around the chest freezer leading to the basement storage area also, approximately 3 mice droppings in dining area and inside garbage cabinet. Management instructed to detail clean and sanitize all mentioned affected areas throughout the premises. Additional pest control service is needed to eliminate the pest activity. Priority violation 7-38-020(a),no citation issued.
39. Contamination prevented during food preparation, storage & display
- comments: must store all food items at least 6' off of the floor and 6' away from walls to prevent rodent harborage conditions. Must use proper storage racks so that the floors can be cleaned underneath.
49. Non-food/food contact surfaces clean
- comments: detail clean the cooking equipment throughout including the deep fryer, stove, grill, pizza ovens encrusted with grease and food debris. Clean all prep coolers, prep tables, storage shelves, the grease trap, and hot holding unit.
55. Physical facilities installed, maintained & clean
- comments: clean the floor throughout the premises especially under and behind all equipment, in the cabinets behind the front counter and garbage cabinet near the front door, in the basement storage area and storage area next to the staircase. Clean the grease on the walls of the food prep area. Clean the soot and debris hanging from the ceiling tiles, the ceiling tile track and soiled ceiling tiles in the food prep area. Clean the walls of the dish rack station next to the 3 compartment sink.
56. Adequate ventilation & lighting; designated areas used
- comments: clean the grease and hanging debris on the ventilation exhaust fan, and on the ventilation hood and filters in the food prep area.
