- comments: 3-501. 16(a:2,&b) observed time/temperature control for safety foods (eggs, pork) at improper cold holding temperatures in the refrigeration units; 11 dozen of eggs at 52f and about 1 lb of cooked sausage at 50f. Instructed to discard and denature said tcs foods and always maintain all tcs foods at 41f or below at all times. Priority violation. Citation issued 7-38-005.

- comments: 3-501. 17 observed cooked sausage out of the original packaging and held for over 24 hours without a label containing the product discard date. Instructed to label all time/temperature control for safety ready to eat foods with a discard date and maintain. Priority foundation 7-38-005.

- comments: 4-301. 11 observed two refrigerators units (with tcs foods inside) at improper cold holding temperatures ranging from 50f-52f during the inspection. Instructed to always maintain all refrigeration units at 41f or below at all times. Said refrigeration units tagged and held for inspection by the chicago department of public health and may not be used. Priority violation. Citation issued 7-38-005.

Training programs must be accredited by the american national standards institute or another reputable accreditation agency under the astm international e2659-09 (standard practice for certificate programs). Observed no allergen training certificate on premises at this time, instructed to provide. Instructed to correct the previous core violations. Priority foundation. Citation issued 7-42-090.
