Back in 2008, I ate chicken enchiladas with shredded lettuce on the side. Approximately 3 hours later, nausea and vomiting started, followed by diarrhea which turned into almost pure blood. Blood in stool for months after. Went to the emergency room and was diagnosed with E. Coli. Burrito Spot was completely unhelpful and unsympathetic. When I called to inform them about my illness, they said "oh, ok." Zero apology. | Symptome: Durchfall, Fieber, Übelkeit, Erbrechen

I believe E. coli poisoning has a longer incubation period than 3 hours. You were most likely infected from something you ate the day prior to onset of symptoms.
