Cooked ribs pre-packaged for sale in a customer display cooler dated 9/6, whipped ricotta spread dated 9/3, other prepared foods such as dairy based strawberry shortcake with no expiration date in the same display case. Cooked pastas in the the cooks line cooler dated 8/26 assorted shredded cheeses with no dates, cooked rice dated 8/26, pasta sauce dated 8/26. Instructed all prepared, ready to eat tcs foods held longer than 24 hours must be properly date labeled with an expiration date no longer than 7 days. Priority foundation violation 7-38-005 citation issued.

Must provide and maintain. #58- no food allergen training certificates on premises. Instructed all city of chicago certified food managers must have food allergen training certificates on premises. Priority foundation violation 7-42-090 citation issued.
