- comments: observed no signed employee health policies for all food and conditional employees during time of inspection. Instructed to provide and maintain on site for review as required. Priority foundation violation. #7-38-010. Citation issued.
23. Proper date marking and disposition
- comments: observed approximatley 20 lbs total of the following tcs foods stored inside cooling units without labels (cooked sausages, corned beef, chicken, instructed to provide discard dates for all food prepared on site and held for 24 hours. Must maintain. Person in charge voluntarily discarded all said items during inspection. Priority foundation violation. #7-38-005. Citation issued.

- comments: unable to locate thermometer inside 2 door with cold hold attached in front prep. Instructed to provide.

- comments: observed food storage containers containing working ingredients (flour, batter, seasonings without labels. Insttructed to provide labels on all food removed from original packaging.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed sliding door inoperable on 2 door 7 up cooler located in front prep area. Noted multiple chest freezers equipment mended together with duct tape to hold temperature of product. Instructed to repair and maintain in good condition.

- comments: observed previous core violation not corrected from report #2611229 january 28, 2025. They are as follows 49) 4-602. 13 observed grease on the exterior surfaces of the fryer, at the bottom of the fryer and on the bottom of the prep table next to the cooking equipment; instructed to clean and maintain equipment. -501. 12 observed the floors in need of cleaning under around and behind various equipment including cooking equipment, in washroom and storage closet (furnace room) clean and maintain. Observed walls behind some equipment in need of cleaning; clean walls where needed. Observed dust on the ventilation fan in the washroom; instructed to clean to remove dust observed. Instructed to correct. Priority foundation violation. 7-42-090. Citation issued.
