I work at a restaurant at Miami Beach called the standard at Lido bay, the dishwasher does not get up to standard temperature the dishes are soaking wet all of the time before I plate any food I have to wipe the plate down sometimes we do it dirty towels sometimes we do it with paper towels if we have them it's gotta be reported and it's got to be taken care of now, it's killing us please the standard.
