I ate Thanksgiving leftovers mashed potatoes stored in fridge for 2 weeks. They looked and smelled fine. They tasted fine. Within 2 hours I was nauseated, shaking, diarrhea, weakness, trouble breathing, trouble walking. It's been 24 hours and I stillfeel, Mashed potatoes | Symptoms: Diarrhea, Nausea, Other, Weakness, Shaking, Shortness of Breath

Two weeks in the fridge is too long. As you found out you can't tell if something is spoiled by the way it looks, smells, or tastes.
Shouldn’t eat leftovers for more than a week, mashed potatoes I wouldn’t trust after a couple days
You should never eat leftovers from the fridge after 3-5 days. The potential for food poisoning increases every day after that. It's safer to freeze them if you want to eat them at a later date.
