Unsanitary Food Prep Practices - Food Safety Issue, Strasbourg Grand Est

I ordered a sandwich, and payed for it. They started preparing it and then i noticed that the cook was pinching his noose and keeping the mask down. Then he started pinching the ingredients (tomato, salad) with his fingers/nails before putting them in the sandwich. Then he ate some leftovers and licking his fingers before continuing preparing the food. I told the manager and said i do not want to eat it. He could not speak English and made no effort to understand me. I left then without any food, and with 10$ less in my wallet. This is not only related to COVID, but to flu season, and general cleanliness you expect from a restaurant!
