Report date: Jul 21, 20205. Procedures for responding to vomiting and diarrheal events
- comments: observed clean-up of vomiting and diarrhea procedure on site but no clean-up kit on premises during inspection. Instructed to have said procedure along with required equipment for clean-up. Priority foundation violation. No citation issued. 7-38-005
51. Plumbing installed; proper backflow devices
- comments: observed that hand washing sink in dish washing area is not attached to wall and its shaking. Must repair and maintain
52. Sewage & waste water properly disposed
- comments: observed three compartment sink in dishwashing area in disrepair not draining properly (slow draining), water released from one compartment (basin) backup inside another compartment (basin) when released inside sink. Informed person in charge of requirements and must repair sink and maintain. Priority violation 7-38-030(c) citation issued.
55. Physical facilities installed, maintained & clean
- comments: observed that mops have been stored on floors in rear dish washing area and and behind refrigerator unit in rear. Must place mops in position that can allows them air dry with out soiling walls and floors
60. Previous core violation corrected
- comments: previously cited core violations from 9/10/2019 report #2312032 observed not to be corrected as follows: violation 47: noted assorted food items inside coolers and refrigeration units food stored inside grocery bags. Instructed to properly store all food items inside approved food grade containers. Violation # 47 noted some use of yogurt and juice crates for elevation at the kitchen area, dishwashing area and dry storage area. Instructed not to use crates for elevation to prevent hiding places for pest. Must provide appropriate shelving for storage. All food items must also be stored 6" away from the wall violation # 47 must detail clean the exterior of bulk storage containers in rear storage area. Also remove paper and cardboard of storage shelving and spice racks, and clean shelving to remove spills. Instructed to maintain violation # 49 must clean and maintain clean food debris build up from fryer cabinet,prep tables wheel bases of all equipment, under 3 compartment sink violation #55 must clean debris build up from floor along wall bases in prep and dish washing areas,walk in freezer. Violation # 55 noted heavy clutter throughout establishment on shelves, floors inside and on top unused equipment (reach over freezer)and in storage areas. Instructed to detail clean, organize and remove all unnecessary or unused articles and equipment to prevent hiding places for pest. Must upgrade housing keeping violation # 58 noted certified food managers on duty with no allergen training certification. Instructed management that all food service managers are required to have the allergen training certification. Priority foundation violation 7-42-090 citation issued
