- comments: observed a few bulk storage containers in the kitchen not lable with food items. Must label and maintain.
49. Non-food/food contact surfaces clean
- comments: observed black subtsance on the walls inside the walk in cooler. Must clean and maintain. Also clean the floors under shelving to remove spills and/or debris.
53. Toilet facilities: properly constructed, supplied, & cleaned
- comments: observed the employee washroom door in the prep area not self closing. Must provide and maintain a self closing device as required.
55. Physical facilities installed, maintained & clean
- comments: must clean the wall around the knife rack to remove debris, must clean the light sheilds in the kitchen to remove debris and floors along the wall base and in corners in the dish washing area. Also clean to exterior of the grease trap underneath the dish washer.
