- comments: observed exposed sewage pipes above baking equipment. Overhead exposed drainage waste water pipes coming from the hand sink drains. The said pipes where noted to manager must be encased smooth surface (soffit) durable material and maintain

48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed baking equipment(mixers) to be bigger than 3 compartment sink and cant be submerged in wash water in sink. Must provide cleaning procedure for each separate piece of food-contact equipment with description how to be cleaned in place and/or. Must prepare procedures for re inspection or e-mail it cdph at food@cityofchicago. Org for approval

51. Plumbing installed; proper backflow devices
- comments: found hand sink draining system using pump to drain and routed to second room. Must connected hand washing sink in compliance with plumbing code and provide receipt from licensed plumber. Priority violation. Priority violation 7-38-030(c) no citation issued. -

52. Sewage & waste water properly disposed
- comments: observed three compartment sink in dishwashing area in disrepair not draining properly (slow draining), water released from one compartment (basin) backup inside another compartment (basin) when released inside sink. For this inspection grease interceptor disassembled and water leaking on floor informed person in charge of requirements and must repair sink and maintain. Priority violation 7-38-030(c) no citation issued. -
