- comments: no valid city certified manager on duty while tcs foods are being prepared handled and served such as egg,sausage and polish. Instructed manager that a city certified manager must be on duty/site at all times. Priority foundation violation #7-38-012.
16. Food-contact surfaces: cleaned & sanitized
- comments: instructed manager to detail clean and sanitize prep station, counter tops, storage racks to remove food debris.
37. Food properly labeled; original container
- comments: instructed manager to label all bulk storage containers with the name of the product.
38. Insects, rodents, & animals not present
- comments: observed a 1/4' gap at the bottom of the front door. Must repair and maintain to prevent entry point for pests.
49. Non-food/food contact surfaces clean
- comments: must detail clean the interior of the reach in coolers, also clean the exterior of all equipment to remove food splatter.
51. Plumbing installed; proper backflow devices
- comments: noted leaks at the faucet at the 3 comp sink. Must repair and maintain.
55. Physical facilities installed, maintained & clean
- comments: floors need detail cleaning through out premises to remove debris, spills and grease. Also floors need repair in the prep area and dish washing area.
56. Adequate ventilation & lighting; designated areas used
- comments: must clean the filter above the cooking equipment to remove grease and dust.
