- comments: observed (tcs) foods inside cooler at improper cold temperatures. Approx 2 15-lbs of cooked pork ribs at 48. 0f, 55. 0f. Also approx 2 large deep ( 20, 25lb) white containers of macaroni pasta/ cheese at 51. 0f,57. 0f,( 2) 20-lb corn bread stuffing containers at 48. 0f, 20-lb container of sweet potato pie filling at 54. 0f. Instructed to maintain cold ( tcs) foods at 41. 0f or below. All foods was removed, denatured and discarded by pic at cost approx $ 500. 00. -cos. Priority violation issued 7-38-005
52. Sewage & waste water properly disposed
- comments: observed no grease trap at 3- compartment sink in prep area. Instructed to install.
