- comments: found high temperature dish machine final rinse at 146f. Must provide a minimum surafe temperature of 160f and a final rinse of 180f. High temperature dish machine tagged and held for inspection by chicago department of public health. Instructed to no longer use said dish machine until it is re-inspected by cdph and providing a utensil surface temperature of 160f and a final rinse temperature of 180f. Priority violation. 7-38-025. Citation issued.
