Probably should have looked this up beforehand. Just ate the remainder of an opened pack of Hillshire ham as well, expiration labeled for Dec 2023. Upon opening I noticed a very strong alcohol smell and it also had a viscous layer on the outside slices, so I just removed the top and bottom slices and pat the rest dry. A little mayo, mustard, cheese on some toasted bread, I could barely notice anything wrong with it. In hindsight, I probably should have at least heat the ham slices on a pan or something. I'm typing this 10 minutes after finishing my lunch, wish me luck.
