The inspector saw multiple roaches on a prep cooler and on pizza cart covers, the report says. The inspector also observed inadequate refrigeration, with food items in the cooler above the required temperature. Shredded mozzarella cheese had a temperature of 56.7 degrees and the temperature of diced ham was taken at 51.6 degrees, the report said.
