22. Proper cold holding temperatures
- comments: observed various tcs foods at improper internal temperature inside the prep cooler such as 3lbs of cooked dice chicken at 50. 4f, 3lbs of slice chicken at 59. 2f, 10lbs of shrimps at 50. 0f and 4lbs of beef at 59. 0f. Manager discarded and denature food item: cost- $250 at 20lbs. Priority citation issued #7-38-005.

33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed the prep cooler in poor repair which holds tcs foods such as chicken,beef and shrimps. Observed the interior air temp at 55. 6f. Instructed manager to remove all food and discontinue use until it can maintain and hold the proper temp at 41f or below. Prep cooler was tagged/held for inspection. Priority citation issued #7-38-005.

36. Thermometers provided & accurate
- comments: instructed manager to maintain properly working thermometers.

49. Non-food/food contact surfaces clean
- comments: instructed manager to clean all storage shelving,and interior of coolers and freezers to remove spills and debris.

55. Physical facilities installed, maintained & clean
- comments: floors need cleaning through out to remove spills, debris and grease.
