- comments: observed tcs foods held in the front display cooler at improper temperatures. Temperatures ranged from 46. 2f to 56. 4f and included: ham, tuna, turkey, eggs, chicken, pepperoni, salami, cold cut combo and cheese. Manager discarded all items, a combined weight of approximately 30lbs. Valued at approximately $100. 00. Instructed to monitor and keep cold foods at 41f or less. Priority violation 7-38-005 citation issued
41. Wiping cloths: properly used & stored
- comments: observed wiping cloth not properly stored when not in use. Instructed to store in sanitizing solution (must be at the required ppm) when not in use. Maintain same.
49. Non-food/food contact surfaces clean
- comments: observed the lower surface of the cabinet under the beverage station with dirt and debris. Instructed to clean and maintain cabinet surface.
