Report date: Apr 2, 202616. Food-contact surfaces: cleaned & sanitized
- comments: observed a slight debris accumulation encrusted on the interior of the ice maker. Must remove debris, detail clean inside ice machine/have serviced and maintain ice machine at all times.
37. Food properly labeled; original container
- comments: observed packaged desserts not properly labeled in the prep cooler. Instructed to label all desserts with common name, name of manufacturer and address, ingredients, net contents, etc.
41. Wiping cloths: properly used & stored
- comments: instructed to properly store all washcloths in a sanitizing solution especially when not in use. Wiping cloths must be stored in a clean container with sanitizing solution in prep area.
43. In-use utensils: properly stored
- comments: observed ice scoop stored on ice inside ice maker. Instructed to properly store in a clean separate container to prevent contamination and maintain.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed stained cutting boards in the kitchen prep area. Instructed to resurface or replace the cutting boards and maintain.
54. Garbage & refuse properly disposed; facilities maintained
- comments: observed outside garbage dumpster with overflowing trash lids preventing proper lid closure. Instructed to increase service pick-up or provide larger garbage dumpster must be able to close and remain tigh fitting in order to prevent rodent harborage and maintain. Priority foundation violation 7-38-020(b), citation issued.
55. Physical facilities installed, maintained & clean
- comments: observed food debris and spills on the floors and surfaces throughout the facility. Instructed to detail clean under all shelving units, interior of the rear prep/dishwashing area, around prep tables and all cooking equipment to remove spills, food debris, and dirt buildup. Instructed to detail clean and maintain at all times.
55. Physical facilities installed, maintained & clean
- comments: all unused construction material/junked materials stored piled outside in the rear must be removed from the premises due to potential pest harborage and better maintain.
56. Adequate ventilation & lighting; designated areas used
- comments: observed missing filters above the kitchen exhaust hood system. Instructed to provide and maintain.
57. All food employees have food handler training
- comments: observed no food handler certificates provided on the premises. Must show proof of training for all food handling employees.
58. Allergen training as required
- comments: observed the certified food manager without the allergen training certificate. Must show proof of training.
