5. Procedures for responding to vomiting and diarrheal events
- comments: 2-501. 11 observed no adequate supplies on site to properly respond to vomit and diarrhea events that can potentially occur inside of the facility. Instructed to provide. Priority foundation 7-38-005.
10. Adequate handwashing sinks properly supplied and accessible
- comments: 6-301. 14 observed no hand washing signs located at the hand washing sinks in the prep areas and in the toilet room. Instructed to provide.
16. Food-contact surfaces: cleaned & sanitized
- comments: 4-602. 11(b-e) observed blood splatters on the slaughtering equipment. Instructed to clean and sanitize.
38. Insects, rodents, & animals not present
- comments: 6-501. 111 observed about 20 rodent droppings located in the basement. Instructed to clean and sanitize the affected areas and recommended contacting pest control for a service. Priority foundation. Citation issued 7-38-020(a).
50. Hot & cold water available; adequate pressure
- comments: 5-103. 11(b) observed inadequate hot water at all of the sinks in the facility; 93. 2f at the 3 compartment sink, and 93f at all of the hand washing sinks. Instructed to maintain adequate hot water at all sinks at all times, 3 compartment sink must maintain 110f at all times and all hand washing sinks must maintain 100f at all times. By the end of the inspection adequate hot water was restored and maintaining 110f at the 3 compartment sink and 100f at all hand washing sinks. Priority violation. Citation issued 7-38-030(c).
51. Plumbing installed; proper backflow devices
- comments: 5-204. 12 observed back flow prevention devices are needed at all hose connections. Instructed to provide.
57. All food employees have food handler training
- comments: 2-102. 13 observed two male food handlers without food handlers certificates. Instructed to meet requirement.
