- comments: 3-501. 16(a:2&b) observed tcs foods (about 3 lbs of rotisserie chicken deli meat) in the food prep area at an inadequate cold holding temperature of 52f during the inspection. Instructed to discard, denature, and maintain all cold-holding tcs foods at 41f or below at all times. Priority violation. Citation issued 7-38-005.

- comments: 3-501. 13 observed facility practice inadequate thawing. A 3 lbs package of rotisserie chicken at room temperature in the food prep area. Instructed to always properly thaw tcs foods under cold running water (not exceeding 70f) until the product is 41f.
