This hiring disaster means a lot of dirty rags used to wipe surfaces and poor or no mopping. The supervisors and managers are stretched beyond what they can do to guarantee safe food. I have worked in small and large kitchens and the operating room, responsible for sterile technique. SAFE FOOD is possible and profitable!
