Report date: Mar 26, 20268. Hands clean & properly washed
- comments: 2-301. 14 observed poor hygienic practices by a male food handler located in the restaurant prep area. Observed the male food handler take a drink from his cup then proceed to chop ready to eat tcs foods. Instructed to always remove gloves, wash hands and put new gloves on after every possible contamination. The food handler removed his gloves, washed his hands and put on a new set of gloves during the inspection. Priority violation. Citation issued 7-38-010.
10. Adequate handwashing sinks properly supplied and accessible
- comments: 5-205. 11 observed two handwashing sinks not accessible with items being stored in the basin of the handwashing sinks, some containers in one handwashing sink in the meat walk in cooler and some sponges stored in another handwashing sink located in the restaurant food prep area. Instructed to remove and never store items in the handwashing sink basins, all handwashing sinks must be accessible for adequate handwashing at all times. Employees removed the items during the inspection. Priority foundation. Citation issued 7-38-030(c).

- comments: 6-301. 11 observed no handwashing cleanser at the handwashing sink located in the rear prepared hot foods prep area. Instructed to provide at all times. Manager provided handwashing cleanser during the inspection. Priority foundation. Citation issued under violation above.

28. Toxic substances properly identified, stored, & used
- comments: 7-101. 11 observed a milk container being used to store a toxic chemical (fabuloso) at the front customer service desk. Instructed to only store toxic chemicals in containers that bear a legiable manufacturer's label and never in food grade containers in order to prevent any possible hazardous incidents. Manager removed the milk container of the toxic chemical during the inspection. Priority foundation. Citation issued 7-38-015.
29. Compliance with variance/specialized process/haccp
- comments: 3-502. 11 observed the facility conducting a special process (dehydrating beef) making beef jerky and storing the beef jerky in a non-mechanical holding unit. Instructed to cease the special process and facility must contact the department of health in order to apply for a variance for a special process. Dehydration unit tagged and held for inspection and may not be used. Priority foundation. Citation issued 7-38-005.

- comments: 3-601. 11 observed prepackaged grab and go tcs foods (tamales, deli meat sandwiches, salsas etc. ) in a cold holding unit without the ingredients on the labels. Instructed to provide the ingredients on the labels for all prepackaged grab and go tcs foods.
39. Contamination prevented during food preparation, storage & display
- comments: 3-305. 12 observed items stored under a sewer pipe (bags of onion, boxes) located in the basement. Instructed to remove and never store any items under sewer pipes in order to prevent any type of possible contanmination.
46. Gloves used properly
- comments: 3-304. 15 observed food handlers not changing gloves after any type of possible contanmination. Instructed to review when to change gloves and when to wash hands with all food handlers.
49. Non-food/food contact surfaces clean
- comments: 4-601. 11 observed all cutting boards in multiple food prep areas stained with deep dark grooves. Instructed to remove stains and dark grooves or replace.
51. Plumbing installed; proper backflow devices
- comments: 5-205. 15 observed a slow leak at a sewer pipe in the basement and the sewage water dripping onto the ground. Instructed to repair.
57. All food employees have food handler training
- comments: 2-102. 13 observed all food handler certificates are expired. Instructed to meet requirement for all food handlers.
