- comments: noted internal temperature of the following tcs food items inside cold serving line to be improper:-beef 51. 8f, chicken teriyaki 47. 4f, turkey 44. 6f, veggies 53. 7f, pepperoni 49. 6f, roast chicken 46. 4f. 54. 8f, roast beef 49. 1f, eggs 52. 3f. Manager immediately and voluntarily disposed of 51 lbs of products worth $300. 00 through denaturing process. Priority violation #7-38-005 - cos
33. Proper cooling methods used; adequate equipment for temperature control
- comments: noted temperature of the display case unit to be improper at 55. 4f and service prep cooler also still not maintained with temperature at 68f. Still instructed not to use until equipment is maintaining proper temperature of 41f or below. Equipment is unable to maintain proper temperature when left open and ambient temperature of the room is about 89f. Coolers unable to maintain proper food holding temperatures. Priority violation #7-38-005. Citation issued.
