2. City of chicago food service sanitation certificate
- comments: no person in charge with an original city of chicago food manager certificate while tcs foods were being prepared and served. Person in charge who obtains the city of chicago food manager certificate must be on site at all times. Priority foundation. 7-38-012.
8. Hands clean & properly washed
- comments: observed employee washing hands with water and did not properly dry hands due to no paper towels provided at hand washing sink. Immediately after went to take a customer's order on the register then started to make iced coffee. Employee must wash hands for at least 10-15 seconds with soap and hot running water and dry hands with paper towels or air drying device. Priority violation. 7-38-010.
10. Adequate handwashing sinks properly supplied and accessible
- comments: observed no paper towels at hand washing sinks in front prep and in rear. Also, observed no soap in employee bathroom. Must provide soap and paper towels at each hand washing sink at all times. Priority foundation. 7-38-030(c).
38. Insects, rodents, & animals not present
- comments: observed about 1/4 inch gap to outside at front door entrance. Must repair to prevent entry points for pests.
50. Hot & cold water available; adequate pressure
- comments: observed no hot water at hand washing sink in front prep and at 3-compartment sink. Hot water temperature at hand sink was found at 96. 1f and hot water temperature at 3-compartment sink was found at 102. 4f. Instructed manager hot water temperature at hand washing sink must be at least 100. 0f or higher and hot water temperature at 3-compartment sink should be at 110. 0f or higher. Priority violation. 7-38-030(c).
