Management instructed to have a certified food manager present at all times while tcs foods are being prepared and served. Priority foundation 7-38-012. No citation issued.
9. No bare hand contact with rte food or a pre-approved alternative procedure properly allowed
- comments: 3-301. 11(b) observed a food handling employee take a burrito off of the grill with their bare hands and a spatula and wrap it up with their bare hands. Management instructed that no bare hand contact is allowed with ready-to-eat foods. The food was discarded voluntarily by management. Priority 7-38-010. No citation issued.
10. Adequate handwashing sinks properly supplied and accessible
- comments: 5-204. 11 observed no exposed hand washing sink at the temporary bar set up in the north banquet room. The bar in this area is used for mixed drinks, cut fruit and serving chips and salsa. Management instructed to cease serving drinks and food from the bar area until an exposed hand washing sink has been installed and inspected. Priority foundation 7-38-030(c). No citation issued.

- comments: 6-304. 11 repair the non-working ventilation fans in the men's and women's washrooms in the middle section of the restaurant.
