23. Proper date marking and disposition
- comments: observed the following previously cooked tcs foods (ribs, various pasta noodles, sausages, lasagna portions, mozzerella cheese without discard date labels and stored on premise inside walk-in cooler and 2 door coolers throughout prep. Instructed to provide discard dates for 7 days maximum on all cooked items held on site for more than 24 hours. Must maintain. #7-38-005. Citation issued. Said food items were voluntarily discarded during the time of inspection.

38. Insects, rodents, & animals not present
- comments: observed approximately 30 small and large black live flies flying throughout pizza prep, rear storage on walls and boxes, and throughout beverage dispensers located at front service counter. Noted approximately 5 live roaches crawling in the pizza prep area around dough mixing equipment and drain. Instructed to contact pest control for service. Must eliminate pest activity on the premises. Priority foundation violation. #7-38-020 (a). Citation issued.

49. Non-food/food contact surfaces clean
- comments: observed all heavy equipment in the prep area with grill/fryers in need of cleaning to prevent pest harborage. Instructed to remove grease and food buildup.
