16. Food-contact surfaces: cleaned & sanitized
- comments: 4-501. 114 observed high/low temperature dish machine not properly sanitizing during the inspection. At the time of the inspection, chlorine was attached to the dish machine however the concentration level of the chlorine was 0ppm. Instructed to repair so that the dish machine is sanitizing properly at 50 ppm- 100 ppm of chlorine at all times for low temperature dish machine or 180f for the final rinse for a high temperature dish machine. Dish machine tagged and held for inspection and may not be used. Priority violation. Citation issued 7-38-025.

38. Insects, rodents, & animals not present
- comments: 6-501. 111 observed evidence of pest activity on site. Observed about 50 live small flies on the walls, pipes and dry storage shelves that are located in the dish washing area. Instructed to eliminate pest activity, clean and sanitize affected areas and recommended contacting pest control for a service. Priority foundation. Citation issued 7-38-020(a).
