- High Priority - Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. -Curry sauce 123F at 2:30pm (cooling for 1hr) to 110F at 3:30pm at this rate Item will not reach proper cooling temperature in time. Observed item cooling in a deep container. Operator separated and placed in freezer. **Corrective Action Taken**

- High Priority - Roach activity present as evidenced by live roaches found. -1 live roach on wall at dish washing area right of dishwasher. In kitchen. -2 live roaches on counter area of Bison flip top unit at Cookline in kitchen. Operator exterminated cleaned and sanitized the surface.
