Instd to remove rust and maintain surface a smooth, easily cleanable surface. 49 4-601. 11(c): (c) nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Interior cabinets of fryers and exterior sides with excessive grease and food debris. Instd to clean and maintain same 55 6-201. 11: **c** floors, walls, and ceilings- cleanability missing floor tiles near warewashing unit and wore grout lines through out prep area and warewashing unit causing excessive food debris and water on floor. Instd to keep clean and dry at all times. All floor drains through out especially under wok line with heavy debris accumulation on exterior sides and interior of drains.
