10. Adequate handwashing sinks properly supplied and accessible
- comments: observed no hand washing sign at the rear hand washing sink in the dishwashing area. Instructed to provide and maintain.

35. Approved thawing methods used
- comments: observed facility not meeting thawing requirements. Food handler thawing frozen chicken legs in three compartments and sitting in a container of stagnant water. Informed food handler of proper thawing methods (must utilize running water with enough volatility when thawing). Must meet proper thawing requirements and maintain.

36. Thermometers provided & accurate
- comments: observed no metal stem thermometer on site to monitor the internal food temperature of tcs food cooked, delivered and served. Facility must obtain and maintain proper thermometers. Priority foundation violation #7-38-005. Citation issued

40. Personal cleanliness
- comments: observed food handler prepping food without hair restraint. Instructed person in charge that all food handlers must wear a hair restraint.

48. Warewashing facilities: installed, maintained & used; test strips
- comments: observed facility without a chlorine chemical test kit for sanitizer or warewashing area. Informed person in charge of a test kit that accurately measures the concentration of sanitizer must be provided. Priority foundation violation #7-38-005. Citation issued.

49. Non-food/food contact surfaces clean
- comments: observed food splash and debris in the interior of the sliding cooler. Instructed to detail clean.

51. Plumbing installed; proper backflow devices
- comments: observed a slow draining of water at the rear hand-washing sink in the dishwashing area. Instructed to repair and maintain.

55. Physical facilities installed, maintained & clean
- comments: observed mop in a position that does not allow it to dry properly and prevent pest harborage. Must store mop after use in a mounted position that allows for air-drying without soiling and pest harboraging.

60. Previous core violation corrected
- comments: observed previous core violation #58 not corrected from report #2584838 conducted on 11/07/2023: observed no food allergen training for food manager. Must provide certificates of completion on-site and maintain records. Priority foundation violation #7-42-090. Citation issued.
