- comments: observed no vomit/diarrhea cleanup kit on site or written procedures. Instructed management to provide. Priority foundation 7-38-005. Citation issued.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: found the main prep cooler broken and not maintaining proper temperature; cooler is operating at 48f. Priority violation 7-38-005. Cooler tagged; instructed to contact cdph as noted on tag and to not use cooler until maintaining 41f or below.
36. Thermometers provided & accurate
- comments: observed no metal stem probe thermometer on the premises capable of taking hot and cold food temperatures. Management must provide a meatl stem probe thermometer to take hot and cold food temperatures. Priority foundation 7-38-005. Citation issued.
40. Personal cleanliness
- comments: observed a food handling employee preparing food at the flat top grill without a hair restraint. Management instructed that all food handling employees must wear a hair restraint while preparing food.
47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed tin foil and paper bags being used to line the fryer and surround equipment. Must remove and provide all surfaces to be non-corrosive, smooth, and easily cleanable.
53. Toilet facilities: properly constructed, supplied, & cleaned
- comments: observed no covered receptacle (waste can with lid) inside unisex employee washroom. Instructed to provide covered waste receptacle.
60. Previous core violation corrected
- comments: previous core violations from 3/13/2020 report #2365725 not corrected: violation #47 (4-101. 19) observed some rust buildup on the self of the prep table in the rear. Must repaint/refinish to remove rust and provide a non-corrosive, smooth, easily cleanable surface. Violation #51 (5-204. 12) unable to observe the backflow prevention device for the mop sink. Must be able to demonstrate the location of the backflow prevention device for visible inspection. Must correct previous core violations. Priority foundation 7-42-090. Citation issued.
