- comments: food was not protected during storage. We observed two panes of sliced ham(8 lbs) and turkey(9 lbs) (ready-to-eat products), individually loosely wrapped stored under the leaking pipe of the condenser unit inside the walk-in cooler. Food removed and denatured by the manager. Pounds:17lbs, value 55. 38. Priority violation:7-38-005,citation issued

- comments: must label food items at pantry display case.

39. Contamination prevented during food preparation, storage & display
- comments: splash guard is required between prep table at kitchen prep area(east area) by the salads.

40. Personal cleanliness
- comments: observed cook with a beard and without a beard restraint. Also observed employee and manager without hair restraints in the prep area. Instructed to provide beard restraints for all food handlers with beards. Hair restraint is required by everyone entering prep/kitchen areas.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: we observed the outer container of the ice bin inside the cabinet at the pantry extremely rusted with holes and leaking water to a plastic basin. Must repair/replace. Surface must be smooth, cleanable and non-absorbent material

- comments: debris inside the two ovens in the prep area. Clean and maintain even though is used for pot storage.

- comments: when water is released from the sanitizer compartment of the compartment sink mechanical drain leaks. Repair issue.

- comments: there is an excess layer of grease on the cement floor around the grease container in the garbage area inside the garage. Clean and maintain

57. All food employees have food handler training
- comments: food handler training certificates provided during the inspection expired in 2022. Instructed to renew said certificate. Valid only for 3 years.

58. Allergen training as required
- comments: out of 4 certified food service managers, one allergen training certificate was provided on-site. Instructed to provide for all certified food service managers.

60. Previous core violation corrected
- comments: previous core violations not corrected from 2-3-22, report#2549327 #47)4-201. 11: noted torn rubber gasket inside the prep service cooler at the kitchen and door of 2 the refrigeration unit at the assisted living dining room service station. Instructed to detail repair and maintain an - or replace. #47)4-501. 11: noted ice build-up inside the ice cream chest freezers in the kitchen area and assisted living service station area. Instructed to defrost, clean, and maintain. #51)5-205. 15: noted leaking faucet at the exposed hand wash sink of the kitchen prep area. Instructed to repair and maintain. #53)5-501. 17: noted wash rooms on premises with garbage receptacles and no lids. Instructed to provide trash cans with lids at all women washrooms and unisex washrooms #55) 6-501. 12: instructed to clean and maintain floors along the wall base and underneath equipment, especially in the cooking area. Priority foundation violation:7-42-090,citation issued
