- comments: some cleaning needed to the bottom of the fryers to remove grease.
55. Physical facilities installed, maintained & clean
- comments: instructed to clean and maintain the following: floor by drive thru area under equipment, floor by hot water tank in rear of kitchen and all floor drains. Instructed to clean all ceiling vents in kitchen area where needed to remove dust observed. Also clean light sheilds in kitchen area where needed to remove dust observed, remove dust from light bulbs in walk-in cooler and remove dust from fan covers inside of walk-in cooler. Instructed to clean the wall around hot water tank in rear of kitchen.
56. Adequate ventilation & lighting; designated areas used
- comments: observed the vents in the hooded system above the small mini broiler need cleaning; clean and maintain.
