- comments: observed approximately 20 rodent (mice) droppings along the walls in the front prep area, approximately 25 droppings along the walls in the rear storage area near exit, and approximately 15 droppings under shelves near rear mop sink area. Instructed manager to remove items clean and sanitize affected areas and to maintain. Recommend to contact licensed pest control company for service. Priority foundation violation 7-38-020(a) citation issued.

- comments: observed the use of grocery bags in the walk in cooler and walk in freezer. Instructed manager to use food safe bags for food storage.

- comments: observed canned goods (pineapple/condensed milk etc) in walk in cooler opened and stored in original container. Instructed manager to transfer items to food safe containers once opened.

- comments: previous core violations not corrected from inspection report# 2574581 issued 04-19-2023 priority foundation violation 7-42-090 citation issued #39 - observed food containers stored on the floor in the walk-in cooler, prep, and storage areas. Instructed the person in charge to properly store and protect food items from contamination while stored by elevating at least six inches from the floor on raised shelving units. #41 - observed soiled wiping cloths being stored on multiple prep surface areas. Instructed the person in charge to properly store wiping cloths in a sanitizing solution between uses to prevent contamination of equipment & food. Must maintain #47 - observed rusted storage racks in the walk-in cooler and instructed the person in charge to remove rust and ensure surfaces were smooth and easily cleanable. #49 - observed grease buildup on cooking equipment, walls, surrounding floors, and shelving units in the kitchen/prep areas. Instructed the person in charge to degrease, clean, and sanitize. #51 - observed leak at base of faucet at the three-compartment sink, located in the rear prep area. Instructed the person in charge to repair leaks and maintain them. #55 - observed clutter stored on the floor in the rear storage area, located near the rear exit door. Instructed the person in charge to remove all unused articles and equipment to prevent pest harborage. #55 - observed grease buildup, food debris, and dirt on the floor under cooking equipment, along walls, and in all corners in prep, dishwashing, and storage areas. Instructed the person in charge to clean floors under all equipment, along walls, and in all corners in all areas
