- comments: observed no city of chicago food service sanitation manager on duty while time and temperature control for safety (tcs) foods are stored, handled and served. Instructed that a certified food manager must be on site during tcs food prep/handling, serving and storage during operating hours. Priority foundation violation. 7-38-012. No citation issued.
10. Adequate handwashing sinks properly supplied and accessible
- comments: observed hand wash sinks not maintained with proper hot water temperature at 66f, 68. 1f and 67. 4f in the mens washroom near the ktichen area. Instructed hot water at all handwashing sinks must be at least 100f. School engineer attempted to correct, but unable to get the water to the proper temperature. Priority violation. 7-38-030(c). No citation issued.
41. Wiping cloths: properly used & stored
- comments: observed improper storage of wiping cloths on prep surface area(s). Instructed to store properly between usage.
