Advised operator stop use of dishwasher and to set up and utilize three compartment sink to sanitize dishes.
- High Priority - Roach activity present as evidenced by live roaches found. Observed 4 live roaches crawling on top of exterior of dish machine where priming mechanism is located, in kitchen area of establishment.
- High Priority - Shell eggs in use or stored with cracks or broken shells. See stop sale. Observed at prep cooler next to cook line. 2 cracked raw eggs. Operator discarded. **Corrected On-Site**
