- comments: observed facility food handlers preparing and handling�time and temperature control for safety(tcs) foods without original city of chicago food service manager and certificate on site. Informed person in charge city of chicago original food service certificate must remain posted on site and certified manager on site during tcs food prep, cooking, serving and operating hours. Priority foundation violation #7-38-012. Citation issued.
16. Food-contact surfaces: cleaned & sanitized
- comments: observed ice machine located in front prep with a build-up of pink and black slime substance, dripping onto ice cubes stored at below ice bin. Ice is used for human consumption. Instructed to clean, sanitize and maintain. Food handler emptied and cleaned and sanitized ice machine during inspecrtion. Priority foundation violation #7-38-005. Citation issued
38. Insects, rodents, & animals not present
- comments: observed a prohibited animal (dog) on site jumping on front service counter in the facility. Person in charge was made aware that such animals are prohibited from food establishment. Instructed to remove animal from the facility and maintain at all times. Dog was removed during inspection. Priority foundation #7-40-060. Citation issued.
39. Contamination prevented during food preparation, storage & display
- comments: observed food containers stored on the floor in the rear dry storage and on top of grease trap in dish area. Instructed manager to properly store and protect food items from contamination while stored by elevating at least six inches from the floor on raised shelving units.
41. Wiping cloths: properly used & stored
- comments: observed wet wiping cloths on several prep surface areas. Instructed to properly store wiping cloths in a sanitizing solution between uses to prevent contamination of equipment & food. Must maintain
44. Utensils, equipment & linens: properly stored, dried, & handled
- comments: observed eating utensils not inverted. Instructed management to avoid contamination by inverting utensils with handles exposed after sanitizing and air drying.
