Cockroach infestation, scoring below 70. The inspector found live roaches as well as ants inside the walk-in cooler. There were four other critical violations: The walk-in cooler and some other cook-line units weren’t keeping cold, food wasn’t being cooled down safely, condensation and dust were dripping into a large open container of mayonnaise and a cook didn’t wash hands. The inspector listed more than 1,000 pounds of food that had to be thrown away from the malfunctioning coolers. There were also 13 lesser violations, including workers without adequate food-safety knowledge and food debris on kitchen equipment.
