Report date: Mar 31, 202523. Proper date marking and disposition
- comments: observed ready-to-eat, time/temperature control for safety (tcs) foods (deli meat, potatoes, fish, beef, chicken) atored longer than 24 hours, not date marked to indicate the product's name and date on which the food must be sold, discarded or consumed within 7 days. Instructed to provide proper labels for date marking and discard date for refrigerated, ready-to-eat, tcs foods held over 24hrs and placed in all cold-holding units. Priority foundation violation #7-38-005. Citation issued.
37. Food properly labeled; original container
- comments: observed food stored in containers in all walk-in coolers. Instructed to person in charge to provide a label reflecting the food item's name when food has been removed from its original packaging.
38. Insects, rodents, & animals not present
- comments: observed a 1/4" gap at long side of the rear exit door. Must provide a tight-fitting seal at all outer openings to prevent the entry of pests.
39. Contamination prevented during food preparation, storage & display
- comments: observed food containers stored on the floor in all walk-in coolers, prep and storage areas. Instructed manager to properly store and protect food items from contamination while stored by elevating at least six inches from the floor on raised shelving units.
49. Non-food/food contact surfaces clean
- comments: observed an excessive amount of ice buildup on the interior of all reach in prep freezers throughout premises. Must remove excess ice, detail clean, and maintain.
51. Plumbing installed; proper backflow devices
- comments: observed exposed handwashing sink slowly in rear prep are to be slow draining. Instructed to correct issue and maintain at all times.
53. Toilet facilities: properly constructed, supplied, & cleaned
- comments: observed no covered receptacle for proper disposal of sanitary napkins in all-gender washroom. Instructed to provide covered waste receptacle.
57. All food employees have food handler training
- comments: observed expired food handler certificates for all food handling employees. Instructed to update and maintain records at all times.
