- comments: observed no hot or cold running water available at exposed hand washing sink in food preparation area located on the 4th floor. Instructed to repair hot water with the minium temperature of 100. 0f for proper hand washing. Premises has another hand washing sink within close proximity to food preparation area for employees to wash their hands. Priority violation 7-38-030(c) citation issued.

36. Thermometers provided & accurate
- comments: visible and working thermometers needed in prep coolers in food preparation area. Must provide and maintain.

41. Wiping cloths: properly used & stored
- comments: observed wiping cloths stored on top of prep tables in food preparation area. Must properly store wiping cloths in a sanitizing solutiom when not in use.

55. Physical facilities installed, maintained & clean
- comments: observed broken light shield cover in rear dishwashing area. Must repair replace and maintain.

56. Adequate ventilation & lighting; designated areas used
- comments: observed dust build up inide light shiled covers in dishwashing area/food storage area. Must clean and maintain.
