10. Adequate handwashing sinks properly supplied and accessible
- comments: observed the following sinks not maintained with hot water: improper temperature of hot water observed at toilet rooms near dining room, handwashing sinks at improper water min temp of 67. 3f. Instructed person in charge of hot water at all hand washing sinks must be at least 100�f. Service technician arrived on site and now all sinks are maintained between 102f - 105f. Priority violation #7-38-030(c). Citation issued.

22. Proper cold holding temperatures
- comments: noted internal temperatures of the following time/temperature control for safety food items inside the food display cooler to be improper: 5# shrimp ceviche 44. 9f, 5# cooked chicken breast at 48. 3f, 3# tilapia at 46. 3f. Manager immediately and voluntarily disposed of 13 lbs of products worth $250. 00 through the denaturing process. Priority violation #7-38-005. Citation issued.

47. Food & non-food contact surfaces cleanable, properly designed, constructed & used
- comments: observed milk crates being used as shelving throughout the storage areas. Must remove and provide shelving that is 6" off the floor and provides floor accessibility to ensure adequate facility cleaning.

51. Plumbing installed; proper backflow devices
- comments: observed handsink in dish area excessively leaking from pipes, instructed to repair and maintain.

55. Physical facilities installed, maintained & clean
- comments: observed missing and damaged floor tiles in the dry storage room. Instructed to repair to create a smooth and easily cleanable surface. Must maintain at all times.
