Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish machine at 0 ppm. Sanitizer was changed and tested again. Still at 0ppm. DO NOT USE DISH MACHINE UNTIL REPAIRED. Establishment set up 3cs with quat sanitizer.
High Priority - Rodent activity present as evidenced by rodent droppings found. Observed approximately 100 rodent dropping near soda boxes near kitchen entrance. Observed 12 rodent droppings on top of bag soda boxes.
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On speed rack in kitchen; Chicken 69°; ( - Cold Holding). Per manager, chicken pulled out of walk in fridge in cooler 2 hours ago. Manager voluntarily discarded. **Corrective Action Taken**
