- comments: previous core violations not corrected from report #2592275 on 4-5-24:47-observed the cutting boards with deep, dark grooves and stains. Instructed to sand or replace cutting boards. Maintain a smooth and easily cleanable surface. Observed the oven that is used in poor repair. The door is not completely attached and has to be held closed with a bucket. Instructed to fix or replace stove/oven. Maintain same. 48-observed large pots and pans too big to be adequately washed, rinsed and sanitized in the 3-compartment sink. Instructed to use smaller pots/pans or install a 3-comp. Sink large enough to submerged the largest utensil. Maintain same. 55-observed damaged/missing floor tiles in front of the 3-comp sink and in various areas of the food prep area. Instructed to replace all damaged/missing floor tiles throughout as needed. Also, must replace all water stained ceiling tiles in the prep areas. Maintain same. Observed the floors in the corners, under/around the sinks, storage racks, cooking/cooling equipments and in the closet/storage areas with food, dirt and debris. Instructed to detail clean and maintain floors throughout. -the walls, ceiling and vents in the prep area with food, dirt and stains. Instructed to detail clean and maintain all. Observed the area by the reach in freezer in the front area and the interior of the front/side closet blocked with clutter. Instructed to remove clutter and organize the area and the closet. Maintain same. 57-observed the food handlers on site with no proof that they met the requirements. Instructed to obtain and maintain a current food handler's certificate. 58-observed the cfm on site with no allergen training certificate. Instructed to obtain and maintain a current allergen certificate at all times. Priority foundation 7-42-090 citation issued
