- comments: observed approximately 150lbs of raw meat including shrimp, whole roasts, fish, sausage, and chicken at improper temperature of 49. 0 - 49. 9f. Raw meat was valued at approximately $900 was discarded and denatured during inspection. Priority violation 7-38-005.
33. Proper cooling methods used; adequate equipment for temperature control
- comments: observed large butcher cold hold unit at 52f with time temperature controlled food inside including approximately 150lbs of raw beef pork chicken and fish. Cooler was tagged during inspection. Priority violation 7-38-005.

- comments: observed metal shelving within large walk in cooler unclean with dirt and grime. All metal shelving must be cleaned in detail and maintained.
55. Physical facilities installed, maintained & clean
- comments: observed floors of large walk in cooler unclean. Observed floors not smooth and easily cleanable. Floors must be cleaned and maintained at all times. Observed walls behind carnitas cooking area not smooth and easily cleanable. Restore surfaces to a smooth easily cleanable surface and maintain walls in a clean condition.

- comments: observed non working large cold holding unit, observed nonworking ice machine within store. Remove all non working equipment.

- comments: observed previous core violations from report #2564211 dated 9/23/22 #55 unnecessary items/ nonfunctional equipment found in the walk in cooler and basement. This premises should be free of items unnecessary to the operation of the establishment. Priority foundation violation 7-42-090.
